Cookware Compared: Non-Stick, Cast-Iron and Stainless Steel

Quality cookware forms the backbone of any kitchen, and the right pans can genuinely transform your cooking results. The best cookware distributes heat evenly, prevents sticking, and stands up to daily use without warping or degrading. When choosing, prioritise construction quality over flashy features—a well-made aluminium or stainless steel pan with proper thickness (at least 2.5mm base) will outperform a thin pan every time. Consider which hobs you'll be using, as induction requires magnetic materials, and think about handle comfort since you'll be lifting these daily.

Capacity matters more than you might think: a 24-28cm frying pan suits most family cooking, whilst 20cm pans work brilliantly for eggs and smaller portions. Non-stick coatings vary enormously in durability—PTFE-based coatings like Teflon work well but require gentle care, whilst ceramic coatings offer easier maintenance but may not last as long. Stainless steel pans require more skill but reward you with excellent browning and decades of service. Check the handle design too; riveted handles are most secure, though detachable handles save considerable storage space.

Many shoppers buy pans that are too lightweight, which leads to hot spots and warping. Similarly, don't assume expensive means better—mid-range options from established brands often outperform premium designer cookware. Metal utensils will damage non-stick surfaces regardless of manufacturer claims, so keep wooden or silicone tools handy.
