The most important factors are suction power (measured in kPa), seal width for durability, and whether the machine handles both dry and moist foods effectively. Look for models with at least 60kPa of suction power and a seal width of 3mm or more for reliable performance.

Capacity matters if you're sealing larger items or bulk portions—check the maximum seal length, typically ranging from 25cm to 35cm. Built-in bag cutters and storage compartments add convenience, whilst multiple modes (dry, moist, pulse, gentle) give you control over different food types. Automatic or manual operation is largely personal preference, though manual pulse modes prove essential for delicate items like berries or bread. Consider whether you need an external hose attachment for sealing jars and containers, as not all models include this feature.

Avoid buying a sealer without checking the ongoing cost and availability of compatible bags—some brands use proprietary sizes whilst others work with universal bags. Don't overlook the seal quality; a weak or narrow seal can break in the freezer. Test with liquids carefully, as even 'moist mode' machines struggle if liquid reaches the vacuum chamber, potentially damaging the pump.
