Look for full tang construction where the blade extends through the entire handle, providing superior strength and balance. Handle materials matter considerably: pakkawood and G10 composite resist moisture and maintain grip when wet, whilst traditional wood requires more maintenance. Consider whether you need a complete set or individual knives—most home cooks truly need just a chef's knife (20cm), paring knife (9cm), and serrated bread knife, though sets often provide better value if you're starting fresh.
